Toasted S'mores Ice Cream

1 cup whole milk

5 graham crackers

2 cups heavy cream

2 chocolate bars

2/3 cups sugar

1/8 tsp sea salt

1 cup mini marshmallows

Ingredients:

  • 1 cup mini marshmallows (toasted)

  • 2/3 cup granulated sugar

  • 1 cup whole milk

  • 2 cups heavy cream

  • 2 chocolate bars (about 6 ounces total)

  • 5 graham crackers

  • 1/8 tsp sea salt

Instructions:

  1. Begin by toasting your mini marshmallows until they're golden brown. This can be done under a broiler or with a kitchen torch. Keep a watchful eye on them; they toast quickly!

  2. In a saucepan, combine the toasted marshmallows, granulated sugar, sea salt, whole milk, and heavy cream. Gently bring the mixture to a boil, stirring to ensure everything is beautifully blended.

  3. Once boiled, remove from heat and allow the mixture to cool completely. This marshmallow cream base is your s'mores ice cream foundation.

  4. Break the chocolate bars into small chunks, and crush the graham crackers into bite-sized pieces—not too fine, as you want to keep that signature s'mores texture.

  5. When your marshmallow cream base is cool, churn it according to your ice cream maker's instructions.

  6. As the ice cream nears its perfect consistency, fold in the chocolate chunks and graham cracker pieces, distributing them evenly throughout the ice cream.

  7. Freeze until the ice cream reaches your desired firmness, then scoop and serve!
